He is considered an expert at cleaning seafood. He is known as one of the few who can de-bone an American Shad.  When Vince isn't out fishing, he is running his catering business.  Vincent Russo Catering, Inc. has been in business for over 19 years, which specializes in Low Country Boils.  His homemade Italian chicken sausages, made from thigh meat, are always a party favorite.

Vince is an avid outdoorsman, who loves the Low Country.  He keeps his Chaos skiff at his dock and gets out frequently.  He also enjoys duck hunting.  Vince loves fishing for redfish and speckled trout.  "I loved to fish with light tackle, 8lb test is my favorite.  It is a real test of skill, I love the feel of the fight on light tackle."  Says Vince.

Vince grew up loving Savannah, fishing and hunting in the low country.  "I love living here, for a guy who loves to fish, this is a great place.  The Low Country offers many unique angling opportunities.  There is superb red fishing here, as well as speckled trout, flounder, and striped bass."  Says Vince.  "The area also supports a large blue crab fishery and we enjoy a good shrimp harvest as well."

Vince graduated from Benedictine Military School in Savannah, which as founded in 1902.  For the Russo family, going to Benedictine was a tradition.  Then later, he graduated from the University of Georgia.  He is also a past president of the University of Georgia Club of Savannah.

In addition to his catering business, he frequently does speaking engagements and seminars.  "I enjoy teaching people, it is amazing to me how eager people are to learn.  At one seminar I had a Captain tell me that he had learned something from my demo, coming from a captain, I consider that a compliment."  Says Vince.
